CABBAGE AND MEATBALL VEGETABLE
SOUP
 
MEATBALLS:

1 lb. ground beef
2 tbsp. rice, uncooked
1/2 onion, chopped
1 egg
Salt & pepper to taste

Mix ingredients in medium bowl. Form into meatballs. Set aside.

SOUP:

1 med. cabbage, sliced
3 carrots, sliced
1 potato, diced into sm. pieces
1 sm. onion, sliced
3 c. fresh or frozen string beans
1/2 (16 oz.) can corn or frozen
3 cans tomato soup mixed in equal parts of water
Salt & pepper to taste

Place all ingredients, including meatballs, into a large pot. Bring to boil on medium heat. Stir occasionally. Reduce to low heat and simmer 45 minutes, stirring occasionally.
