SOUTHERN FRIED RICE 
1 stick butter
1 medium onion, chopped
1 c. uncooked long grain rice (not minute rice)
2 cans beef consomme, undiluted

Melt butter in heavy skillet. Cook onion slowly until soft, but not brown. Add rice and cook, uncovered, on lowest heat for 30 minutes. Stir occasionally to keep from burning. Pour into casserole dish and stir in consomme. Cover with lid and bake 40 minutes in 375 degree oven. Rice will absorb liquid.
