BAKED CORN LOAF | |
2 Tbsps. butter 1 cup milk 2 Tbsps. flour 2 eggs, slightly beaten 1 (16 oz.) can cream style corn 1 small onion, minced 3/4 tsp. salt 1/4 tsp. pepper 1 1/4 cups cracker crumbs 2 Tbsps. butter, topping Make white sauce of butter, flour and milk. In separate bowl beat eggs slightly and add milk mixture, corn, salt, pepper and onion. Add 1 cup of cracker crumbs. Place in greased casserole dish. Top with 1/4 cup cracker crumbs and pour 2 tablespoons of melted butter over top. Bake at 350 degrees for 30-45 minutes or until firm in center. |
