CRAZY JOE'S SEAFOOD STUFFING 
This is my own recipe. It is great to stuff shrimp, mushroom caps, fish, squash etc.

1 cup (2 sticks) butter, melted
1 small finely chopped yellow onion
1 small package white mushrooms, finely chopped
2 celery ribs, finely chopped
16 oz. seasoned bread crumbs (Italian)
1 (8 oz.) package crab delights, chopped into small pieces
1 tbsp. onion powder
1 tbsp. garlic powder
2 tbsp. Cajun seasoning
2 (15 oz. ea.) cans chicken broth

In large frying pan melt butter over medium-low heat. When butter is melted, add onions, mushrooms and celery. Sauté until vegetables are soft.

In large mixing bowl add bread crumbs. Add seafood delights, onion, garlic and Cajun seasonings. Mix then add butter and vegetables, mix well. Add chicken broth and mix.

Tip: If a little dry add some water.

Let cool in refrigerator for a few hours then stuff your food of choice!
