CJ'S SEAFOOD STUFFING 
It's great to stuff shrimp, mushroom caps, fish, squash, etc.

1 cup (2 sticks) butter, melted
1 small yellow onion, finely chopped
1 (4 oz.) pkg. fresh white mushrooms, finely chopped
2 ribs celery, finely chopped
1 lb. seasoned bread crumbs (I use Italian)
1 (8 oz.) pkg. crab delights, chopped into small pieces
1 tbsp. onion powder
1 tbsp. garlic powder
2 tbsp. Cajun seasoning
2 (15 oz. ea.) cans chicken broth

In large frying pan melt butter over medium-low heat. When butter is melted, add onions, mushrooms and celery. Sauté till vegetables are soft.

In large mixing bowl add bread crumbs. Add seafood delights. Mix onion, garlic and Cajun seasonings. Mix then add butter and vegetables. Finally add chicken broth and mix. If a little dry add some water. Let cool in refrigerator for a few hours then stuff your food of choice.
