JALAPENO CORNBREAD 
1 pkg. cornbread mix
2 eggs
3/4 c. milk
1 1/2 tbsp. sugar
1/4 c. oil
1 small can creamed corn
1 jalapeno pepper, chopped
1/2 small onion, diced
1 c. grated Cheddar cheese
1 lb. ground chuck
small amount garlic powder
salt and pepper to taste

Preheat oven to 350°F. Brown meat, onion, salt, pepper and garlic. Dice pepper. Mix all ingredients except meat and cheese. Grease 9-inch cast-iron skillet and heat in oven. Place 1/2 of cornbread mixture in hot skillet. Add meat, then cheese. Top with remaining cornbread mixture.

Bake at 350°F for 30 to 45 minutes until brown.
