JALAPENO CORNBREAD 
2 boxes Jiffy cornbread mix
1 (16 oz.) can cream corn
1 bell pepper, chopped
1/2 c. chopped onion
1 lb. ground chuck
1 pkg. cheddar cheese, grated
4 to 6 jalapeno peppers, chopped

Brown meat, drain. Mix in onion, bell pepper, cheese and peppers. Mix cornbread as package directs. Add corn. Pour 1/2 mix into pan sprayed with oil. Spread meat mixture over and then add other half of cornbread mix, spreading over top. Bake at 400 degrees for about 1 hour until brown.
