TURKEY STIR-FRY 
1 lb. turkey breast
2 tbsp. cooking oil
1 med. onion, thinly sliced
1 stalk celery, diced
2 c. sliced mushrooms
1 can green beans (drained)
3/4 c. chicken broth
1 tbsp. cornstarch
2 tbsp. soy sauce

Cut turkey into 1 inch cubes. Salt and pepper lightly to taste. Heat oil in large skillet or wok over medium high heat until hot. Add turkey; stir-fry until no longer pink, about 3 minutes.

Add onion and celery; stir-fry 1 minute. Add mushrooms; stir-fry 1 minute. Add green beans; stir-fry 1 minute.

Mix broth, cornstarch and soy sauce. Stir into turkey mixture. Heat to boiling, stirring constantly; boil and stir 1 minute. Serve with rice if desired. 4 servings.
