HAMBURGER IN ZUCCHINI SHELLS 
1 lb. zucchini
1 lb. hamburger
1 chopped onion
1 (8 oz.) can tomato juice or paste
1 tsp. oregano
2 tbsp. grated pizza cheese
1/2 c. bread crumbs
Salt and pepper to taste

Wash zucchini. Cut off ends. Cut in half-length wise. Cook in boiling water 10 minutes. Drain. Scoop out zucchini pulp leaving 1/4 to 1/2 pulp in shell. The pulp left in shell should then be chopped or cut with knife. Place these "boats" in casserole dish.

Brown meat, onion, salt and pepper. Drain off fat. Stir in 1/2 tomato juice, oregano and zucchini pulp. Refill shells with meat and 1/2 cheese. Spoon rest of tomato juice over meat. Sprinkle with cheese and bread crumbs. Bake at 350 degrees uncovered for 45 to 60 minutes.
