BROCCOLI CASSEROLE 
2 (12 oz.) pkgs. broccoli
1 stick butter
2 cans chicken soup, creamed
1 c. minute rice
1 c. Velveeta cheese, cubed
1/2 c. onion
2 c. milk
1 tsp. salt
Ritz crackers, crumbled

Melt butter; saute onions. Add remaining ingredients, mix well. Spread in a 9 x 13 pan. Crush Ritz crackers and spread over the top. Bake at 350 degrees for 45 minutes to 1 hour.
