MOTHER'S APPLE CAKE 
1 1/4 c. vegetable oil
2 c. sugar
3 eggs, beaten lightly
3 lg. or 4 sm. apples, peeled & chopped
1 c. chopped nuts
3 c. plain flour
1 tsp. salt
2 tsp. vanilla
1 tsp. baking soda

Mix oil, sugar and eggs with mixer, and add vanilla. Sift salt and soda with flour and add to above mix. Fold in apples and nuts with spoon. Bake in one large pan or two 9 inch layer pans (lined with greased and floured wax paper). Put in cold oven and bake at 325 degrees for 45 minutes.

CARAMEL ICING:

1 stick butter
1 box light brown sugar
1/4 c. canned milk

Bring to soft boil using candy thermometer. Remove from heat. Add 1 teaspoon vanilla. Beat with spoon until spreading consistency.
