CHICKEN HASH 
2 c. cooked chicken
1 med. onion, chopped
1 lg. or 2 med. potatoes, chopped
1 or 2 sweet peppers, chopped (red, green or yellow or mixed)
2 carrots, shredded
1 tsp. salt
2 tbsp. chopped parsley
1/2 tsp. poultry season (or sage or thyme)
2 1/2 c. chicken gravy, canned or homemade
1 egg
Cheese (optional), 1/2 c., shredded

Combine all ingredients except cheese. Bake covered at 350 degrees F. 45 minutes. Uncover. Top with cheese and bake 5-10 minutes longer.
