ARTICHOKE SQUARES 
12 oz. marinated artichoke hearts
1 sm. onion, finely chopped
1 clove garlic, finely minced
4 eggs
1/4 tsp. salt
1/8 tsp. oregano
1/2 lb. sharp Cheddar cheese, grated
1 tbsp. minced parsley
1/4 c. bread crumbs
1/8 tsp. pepper
1/8 tsp. Tabasco sauce

Drain liquid from 1 jar of artichokes into frying pan. Drain and discard liquid from other jar. Chop artichokes and set aside. Saute onion and garlic until limp. Beat eggs in bowl. Add bread crumbs and seasonings; stir in cheese, parsley, artichokes and onion mixture.

Pour into greased 10-inch square pan and bake at 325 degrees for 30 minutes, or until set. Cool in pan and cut into 1-inch squares. Serve cool or reheat at 325 degrees for 10 minutes. Do not cut without cooling, or it will crumble.
