HOT ARTICHOKE CHEESE SQUARES 
2 tbsp. bacon drippings or oil
1/3 c. finely chopped onion
1 clove garlic, mashed
4 eggs
1 (14 oz.) can artichoke hearts, drained and chopped
1/4 c. dry bread crumbs
1/2 lb. Swiss cheese, shredded
2 tsp. minced parsley
1/2 tsp. salt
Pepper to taste
1/4 tsp. oregano
1/8 tsp. Tabasco

Grease a 7x11 inch dish. Preheat oven to 325 degrees. In skillet, heat drippings and saute onions and garlic until limp, but not brown. Beat eggs to a froth in a bowl. Stir in artichokes, onions, crumbs, cheese, parsley and seasonings. Turn mixture into baking pan and bake for 25 to 30 minutes until set when lightly touched. Let cool a bit, and cut into 1 1/2 inch squares. May make ahead, refrigerate and reheat for 10 minutes at 325 degrees.
