SHERRY'S ARTICHOKE LEEK SQUARES | |
2 (6 oz jars each) marinated artichoke hearts 1 1/2 cups minced leeks 1 tsp. minced garlic 4 eggs 1/4 cup bread crumbs 1/4 tsp. dried oregano 1/4 tsp. hot pepper sauce 1/4 tsp. salt 1/8 tsp. pepper 1/4 lb each of sharp cheddar cheese and Muenster cheese 3 tbsp. fresh parsley, minced Preheat oven to 375°F. Spray a 7x11-inch pan with cooking spray. In a skillet over medium-high heat, heat marinade from artichokes. Add leek and garlic, cook until soft. Remove with slotted spoon. Set aside. In large bowl, beat eggs. Stir in bread crumbs, oregano, hot pepper sauce, salt and pepper. Chop artichoke hearts, add to egg mix. Stir in leeks, garlic, cheeses, and parsley. Mix well. Pour into pan. Bake 30 minutes or until golden in color. Cut into 1-inch squares. Submitted by: Sherry Monfils |
