BILLY'S BEEF AND MACARONI
GOULASH
 
This makes a nice batch of goulash and can be warmed up for 3 to 4 days.

1 lb. lean ground beef
1 cup small macaroni shells, cooked 9 minutes
1 green bell pepper, diced
1 large yellow onion, chopped
1 (15 oz.) can diced tomatoes
1 (8 oz.) can tomato sauce
1/2 tsp. salt
4 big splashes hot pepper sauce (I use Louisiana)
ground black pepper, to taste
1 or 2 tbsp. ground oregano
water, to desired consistency

Brown ground beef in skillet and drain. Rinse in cold water if desired. Put beef in large soup pot. Cook macaroni in boiling salted water about 9 minutes. Do not overcook. Drain macaroni when done.

Add macaroni to beef. Dice green bell pepper. Chop up yellow onion. Add bell pepper and onion to the beef and macaroni mixture. Add diced tomatoes, juice and all. Add tomato sauce. Add all of the seasonings. Add water to your desired consistency.

Bring to a boil, then reduce and simmer gently for 30 minutes.

Sounds perfect. Will add couple cloves of minced garlic - and maybe replace 1/2 the water needed and use up leftover V-8 juice. Can hardly wait to get this going. Sounds exactly like my mother used to make. Thank you for posting.
