HOT ARTICHOKE CHEESE SQUARES 
1/3 c. finely chopped onion
1 sm. clove garlic, mashed
2 tbsp. bacon drippings
4 eggs, well beaten
1 (14 oz.) can artichoke hearts, drained and finely chopped
1/4 c. coarse dry bread crumbs
1/2 lb. shredded Swiss or cheddar cheese
2 tbsp. minced parsley
1/2 tsp. salt
1/4 tsp. oregano
1/8 tsp. pepper
Dash of Tabasco sauce

Saute onion and garlic in drippings; add to eggs with artichokes, bread crumbs, cheese, parsley, and seasonings. Turn into buttered 11 x 7 x 1 inch pan. Bake at 325 degrees for 30 minutes. Cut into squares. Serve hot.
