YUMMY POTATO PATTIES | |
3 Yukon gold potatoes (regular size) 3 cloves of garlic (2 cloves are pressed through garlic press) 1 c. shredded cheese 1/2 c. chopped onions (yellow, green, whatever you like) 1 tsp. butter or any buttery spread you like Optional: one egg to help ingredients stick together while in frying pan add seasoning to taste: pinch of truffle salt 21 seasoning salute (found at Trader Joe's) salt and pepper, as desired/needed Cut potatoes into small chunks and boil until soft. Cut up one clove of garlic and drop in pot with potatoes and water. Strain and quickly splash cold water over them. Pour potatoes into a mixing bowl and mix on low until all chunks are mashed. These potatoes are really soft after they come out of the water so it should only take about 1 minute to mash to a creamy texture. Add butter, onions, cheese and pressed garlic. Mix until well blended and creamy. Add seasoning to flavor. Let cool for about 5-10 minutes. Warm up olive oil in a frying pan. I use a silicone sunny side up egg shaper to start the potato patty. Drop about three scoops onto the frying pan and let fry for about 2 minutes. Spray your spatula before flipping patty. Fry until brown. Yield: 3 (2-inch thick) patties. Enjoy! Submitted by: J.
