HUMMUS 
1 1/2 c. raw chickpeas
3 med. cloves of garlic
1 1/2 tsp. salt
Dash of tamari (or soy sauce)
Juice from 2 lemons
3/4 c. sesame tahini
1 med. onion, minced
Dash of pepper or to taste (can be cayenne pepper, too)

Soak chickpeas approximately 1 1/2 hours. Then boil approximately 1 1/2 hours until very soft. Mash chick peas into a thick paste (food processor works best). Add remaining ingredients, mix thoroughly.

NOTES: While mashing chickpeas, adding liquid ingredients helps. Some people like more lemon, soy or garlic, etc. Season to taste. Add parsley if you like.
