APPALACHIAN APPLE PIE 
3/4 c. sugar
3 tbsp. flour
1/2 tsp. cinnamon
1/8 tsp. allspice
6 c. sliced cooking apples
Pastry crust

Mix sugar, flour, spices and sliced apples. Put in 1 1/2 quart casserole. Roll pastry crust to fit casserole top. Flute rim of casserole and cut slits in top. Cover edge with foil. Bake at 375 degrees for 25 minutes. Remove foil and bake 30 minutes longer. Crust should be golden and bubbly.
