YAM AND APPLE SCALLOP 
3 med. sweet potatoes
1 tbsp. lemon juice
1/2 tsp. ground cinnamon
1/2 tsp. orange extract
2 tbsp. butter
2 med. cooking apples
1/2 c. brown sugar, packed
1/2 tsp. pumpkin pie spice
1/2 c. pecans, chopped
2 eggs, beaten with 1/2 c. milk

Cook potatoes 20 to 25 minutes, until tender. Cool and peel. Cut into 1/4 inch slices and arrange in 12 x 8 inch casserole. Core apples and slice into 1/4 inch slices. Cut rings in half and arrange in rows over potatoes. Sprinkle with lemon juice. Pour egg mixture into dish. Combine next five ingredients and sprinkle over casserole. Dot with butter. Bake uncovered, at 350 degrees for 35 minutes or until apples are tender.
