SWEET POTATO AND APPLE CASSEROLE 
6 - 8 yams, boiled until just tender, peeled and sliced
5 - 6 apples (Granny Smith), peeled and sliced
2 c. water
1 c. sugar
4 tbsp. cornstarch 1/4 lb. butter
3/4 tsp. salt

Mix cornstarch, sugar and salt. Add water and bring to a boil. Add butter and cook until thick. Arrange yams and apples in layers with potatoes on the top layer. Cover with sauce and bake 1 1/2 hours in 325 degree oven. Use a 9 x 12 inch casserole dish.
