CINNAMON CUCUMBER RINGS | |
Peel 2 gallons of cucumbers, take out centers and slice into 1/4 inch rings. Dissolve 2 cups pickling lime in 2 gallons water. Pour over cucumbers and soak 24 hours. SECOND DAY: Drain cucumbers and wash them through 3 waters. Combine these ingredients: 1 tbsp. alum 1 oz. food coloring (red or green) Pour this mixture over cucumbers; add enough water to cover. Bring to a boil and simmer 1 hour. Drain. Combine these ingredients, heat and pour over cucumbers: 5 c. water 5 lbs. sugar 8 cinnamon sticks Allow to stand 24 hours. THIRD DAY: Pour liquid from cucumbers, cook it to the boiling point, and pour it back over the cucumbers. Let stand 24 hours. FOURTH DAY: Repeat the third day's process. FIFTH DAY: Bring mixture to a boil, pack in sterilized jars and process in boiling water bath until lids are sealed. |
