CUCUMBER CINNAMON RINGS 
1 tbsp. alum
2 gal. lg. cucumber rings
8 1/2 qt. water
2 c. lime
1 sm. bottle red food coloring
1 c. vinegar

SYRUP:

10 c. sugar
2 c. vinegar
2 c. water
1 pkg. red hot candies
8 sticks whole cinnamon

Use large cucumbers; peel and slice 1 1/2 inches thick and remove seeds. Dissolve lime in water; put the cucumber rings in and let stand for 24 hours. Drain. Cover with cold water and let stand for 3 hours; drain. Add vinegar, food coloring and alum with enough water to cover. Simmer for 2 hours. Drain. Use syrup and mix all ingredients. Bring to boil. Pour over cucumber rings. Close tight and let stand overnight.

For 3 consecutive mornings drain off liquid in pan. Heat and pour over rings. The last morning cover with syrup; bring to a boil. Pack in sterilized jars and seal. Makes 10 pints.
