CINNAMON CUCUMBER RINGS | |
2 gal. sliced cucumber rings (ones that are turning yellow) 2 c. lime 8 1/2 qts. water 1 c. vinegar 1 tbsp. alum 1/3 c. red food color or 1 sm. bottle 2 c. vinegar 2 c. water 10 c. sugar 8 cinnamon sticks 1 c. red hots (cinnamon candy) Slice (1/2 inch) the cucumbers, peel and take out seeds, will look like doughnut. Soak 24 hours in lime and 8 1/2 quarts water. Drain, wash well, cover with cold water, soak 3 hours. Drain. 1 cup vinegar and 1 tablespoon alum and food color, mix and put over cucumbers, adding water to cover. Cook on simmer for 2 hours. Drain and throw away water. Heat 2 cups vinegar, 2 cups water, 10 cups sugar, 8 cinnamon sticks, and 1 cup red hots and pour over cucumbers. For next 2 mornings drain juice and reheat (NOT BOIL), pour over cucumbers. Keep covered to hold in heat and steam. Third morning reheat juice and cucumbers, put in jars and seal. |
