CUCUMBER CINNAMON RINGS | |
2 gallons lg. cucumber rings, peeled 8 1/2 qts. water 2 c. hydrated lime 1 c. vinegar 1 tbsp. alum 1 sm. bottle red food coloring SYRUP: 2 c. vinegar 2 c. water 10 c. sugar 8 sticks cinnamon & 1 pkg. red hot candies Put rings in lime water. Let stand 24 hours, then drain and wash in cool water. Pour in cold water over rings. Soak for 3 hours and drain. Add vinegar, alum, food coloring and water to cover. Heat and simmer for 2 hours. Drain. Mix syrup ingredients. Bring to a boil and pour over cucumbers and simmer until cucumbers are clear. Cool and put cucumbers in jars, then reheat syrup and pour over cucumbers and seal. Makes 4 or 5 quarts. |
