CINNAMON CUCUMBER RINGS | |
Peel and make into rings like apple rings enough cucumbers to make 2 gallons of rings. Use large cucumbers, and the hole cutter from doughnut cutter will make nice rings. Soak at least 24 hours in 2 cups dehydrated lime and 8 1/2 quarts cold water. After soak period, rinse thoroughly. Soak 3 hours in cold water. Drain. Mix 1 cup cider vinegar, 1 small bottle red food coloring, 1 tablespoon alum with enough water to cover rings. Heat to simmer, then let set 3 hours. Pour off. Make syrup: 2 c. vinegar 2 c. water 10 c. sugar 8 sticks cinnamon 1 (10 oz.) pkg. cinnamon red hots Bring to boil and pour over cucumber rings. Let set overnight. Drain and boil syrup up the next 2 mornings. Third morning, heat syrup and rings thoroughly and pack in hot jars. Makes 10 to 12 pints. |
