BELLE'S BUTTERMILK PANCAKES | |
1 cup all-purpose flour 1 tbsp. sugar 1/2 tsp. baking soda 1/4 tsp. salt 2 tbsp. butter, melted 1/2 tsp. almond, vanilla, orange or lemon extract non-stick cooking spray (Pam) 1 cup buttermilk 1 egg In a medium bowl, mix together dry ingredients. Whisk together eggs, buttermilk, and butter and vanilla; stir into dry ingredients, mixing well. Spray with non-stick spray or brush with oil a skillet or griddle. Heat over medium heat until a drop of water "dances" when dropped on the hot surface. For each pancake, pour about 2 tablespoons of batter onto the well-greased skillet. When the edges of the pancakes develop tiny holes and large holes begin to form on the top center, flip the pancakes, then cook for one or two minutes more, or until the centers are cooked through. Makes about 12 pancakes. Variation: Add 3/4 cup blueberries to batter or drop a few at a time into the pancake right after it has been poured into the skillet.
