RICH LEMON MUFFINS 
2 c. flour
1/2 c. & 2 tbsp. sugar
1/2 c. butter
1 tsp. baking powder
1/2 c. fresh lemon juice
1 tsp. salt
2 eggs
Finely grated rind of 1 lemon

Combine flour, 1/2 cup sugar, baking powder and salt. Melt butter. Stir in lemon juice, eggs and rind. Spoon into muffin cups. Sprinkle with sugar. Bake 15-20 minutes in 400 degree oven.
