LEMON APPLE OAT MUFFINS 
1 egg
1/2 c. milk
1/4 c. vegetable oil
2 tbsp. bottled lemon juice
3/4 c. quick cooking oats
1 1/4 c. unsifted flour
1/2 c. firmly packed light brown sugar
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
1 c. (1 med.) finely chopped Golden Delicious apple
1/2 c. chopped nuts

LEMON ICING:

1/2 c. powdered sugar
1 tbsp. lemon juice
1 tbsp. melted butter

Preheat oven to 400 degrees. In a medium bowl, beat egg. Stir in milk, oil and lemon juice. Add oats; mix well. Combine flour, brown sugar, baking powder, baking soda, cinnamon, salt and nutmeg. Add to oats mixture with apples and nuts. Mix only until moistened (batter will be very thick). Spoon into muffin cups that are greased or lined with paper cups. Bake 20 minutes or until golden. Make frosting by combining powdered sugar, lemon juice and butter. Spoon over hot muffins. Makes about 1 dozen.
