STUFFED SHELLS WITH SPINACH 
2 tbsp. oil
2 tbsp. chopped onion
1/2 c. chopped celery
8 oz. Mozzarella cheese, grated
Parmesan cheese to taste
2 lbs. Ricotta cheese
1 box frozen chopped spinach (defrost & drain)
1 egg
1/2 tsp. salt
1/8 tsp. oregano
1/8 tsp. ground nutmeg
Dash pepper

Brown onion and celery in the oil. Combine Ricotta cheese, spinach, egg, salt, oregano, nutmeg and pepper in a bowl. Add browned ingredients. Stuff boiled shells and top with your favorite sauce. Sprinkle top with Mozzarella and Parmesan cheese. Bake at 350 degrees for 25 minutes.
