WALNUT DATE PINWHEEL COOKIES 
1/2 cup (1 stick) butter
1/2 cup brown sugar
1/2 cup sugar
1 egg
1/2 tsp. vanilla
2 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt

Thoroughly cream together butter and sugars. Add egg and vanilla, beat well. Sift together dry ingredients, stir into creamed mixture. Chill.

Divide dough in half. On a lightly floured surface, roll one part in 12x8-inch rectangle, 1/4-inch thick Spread half of date filling (recipe below) evenly over dough. Begin at long end, roll like jelly roll. Repeat with remaining dough. Wrap rolls in waxed paper. Chill several hours.

Slice dough 1/4-inch thick. Bake on greased cookie sheet at 400°F for about 8 minutes or lightly browned edges.

Makes about 5 dozen.

Walnut Date Filling:

8 oz. pitted chopped dates
1/2 cup sugar
1/2 cup water
1/2 cup black walnuts

In saucepan, combine pitted dates, sugar and water. Cook and stir till mixture boils and thickens slightly. Cool. Before using add chopped black walnuts.
