CHICKEN SPINACH STUFFED SHELLS 
1 tbsp. salt
3 qts. boiling water
4 lg. tomatoes, chopped
1 (28 oz.) can tomatoes, crushed
1/2 c. fresh spinach, chopped
3 tbsp. scallions, chopped
3/4 tsp. oregano
1/2 tsp. salt
1/4 tsp. pepper

Cook shells according to directions. Combine tomatoes, spinach, scallions, oregano, salt, and pepper. Cover and cook over medium heat for 10 minutes. Measure 1 cup of sauce; stir into chicken. Spoon 1 tablespoon chicken mixture into each shell. Set in single layer in 13 x 9 inch pan. Spoon remaining sauce over and around shells. Cover and bake for 25 minutes or until heated through at 375 degrees.
