DEBORAH'S DIET SOUP WITH PROTEIN 
My version of diet soup includes grains and real chicken (instead of bouillon cubes). Delicious!!

3 chicken breasts or thighs (boneless/skinless)
4 tsp. light olive oil
1 (15 oz.) can chicken broth
1 (12 oz.) bottle V8 vegetable juice (low sodium)
2 cups zucchini
2 cups squash
1 tsp. cayenne pepper
2 tsp. onion power
2 tsp. garlic power
2 tsp. roasted garlic and bell pepper seasoning
3 tsp. coarse sweet basil
1 cup fresh mushrooms, sliced
1 cup brown rice (long grain)

Cut chicken into chunks. Bring to a boil and simmer. After 1 hour add olive oil, chicken broth and V8 vegetable juice. Let it simmer for 15 minutes then add remaining ingredients (except the rice) and simmer for 45 minutes.

Cook rice by itself, then add rice to the pot last. Serve.
