LUSCIOUS FRUIT SALAD | |
2 (11 oz.) cans mandarin oranges, drained 1 (17 oz.) can apricot halves, drained 1 (17 oz.) can fruit cocktail, drained 1 (20 oz.) can pineapple chunks or slices, drained 1 (16 oz.) can peach slices, drained 1 (6 oz.) can maraschino cherries, drained 3 bananas, sliced 1 red apple, chopped & unpeeled Fresh raspberries or blueberries (opt.) FRUIT SAUCE: 1 (3 3/4 oz.) box instant vanilla or French vanilla pudding mix 1 c. milk 1/3 c. orange juice concentrate (do not dilute) 3/4 c. cultured sour cream Drain all canned fruits well. Slice bananas, chop unpeeled apple, pineapple, peaches, apricots, cherries and mandarin oranges into bite size pieces. Drain all well. Mix all fruits together gently; set aside. To make sauce, combine dry pudding mix, orange juice concentrate and sour cream. Beat with wire whisk until thick and smooth. Mix fruit into sauce. Stir well. Cover and chill in refrigerator for 2 to 3 hours or overnight before serving. Serves 15. NOTE: Any 1 fruit may be omitted. |
