BANANA SURPRISE COOKIES 
3/4 c. corn-oil butter, room temperature
1 c. brown sugar, packed
1 c. mashed banana (about 2 medium bananas)
1 egg
1 tsp. vanilla
1 1/2 c. all-purpose flour
1/2 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/2 c. chopped nuts (or half nuts, half wheat germ)
1/2 tsp. salt (optional)
1 1/2 c. rolled oats

In medium mixing bowl using hand-held mixer, cream butter with brown sugar. Mix in banana, egg and vanilla.

In small bowl, combine flour, soda, cinnamon, nutmeg, nuts, and salt, if using. Mix well into banana mixture. Ban hand, stir in rolled oats. Drop by level tablespoonful onto ungreased non-stick baking sheet.

Bake at 350 degrees 12 to 14 minutes or until cookies just begin to turn gold. Makes about 3 1/2 dozen cookies.
