BANANA-O COOKIES | |
1 c. shortening 3/4 c. brown sugar, packed 3/4 c. white sugar 1 tsp. vanilla 2 eggs 1 1/2 c. whole wheat flour 1 1/2 c. oat bran 1 c. oatmeal 3 ripe bananas 1 tsp. salt 1/2 tsp. nutmeg 1/2 tsp. cinnamon 1 c. chopped nuts Cream shortening and sugars. Add eggs and vanilla. Add dry ingredients to creamed mixture alternately with bananas. Stir in nuts. Drop by large teaspoonfuls onto lightly greased cookie sheet. Bake at 350 degrees for 12 minutes. NOTE: These are moist and chewy cookies, and they are a healthy alternative to the regular! |
