CHICKEN ENCHILADAS | |
1 whole chicken, cut up 1 pkg. taco seasoning 1 med. onion 1 can (16 oz.) tomato soup 1 can (16 oz.) refried beans, optional 1 can (16 oz.) enchilada sauce 1 pkg. (8 oz.) taco cheese 1 pkg. flour tortilla, large size Salsa (optional) Boil chicken until done. When done remove skin from chicken and break into bite size pieces in large bowl and add 1/2 package taco seasoning (more if you want spicier) onion and taco cheese. In smaller bowl mix tomato soup and enchilada sauce. Pour a little bit of this onto chicken and mix (until moist.) Then in a 9 x 13-inch pan pour a little bit of sauce enough to cover bottom. Then take tortilla, put a layer of refried beans, then chicken mixture, roll and place in pan, when pan is filled, pour rest of sauce onto tortilla. Cover and bake at 350 degrees for 20 minutes or until hot. Serve with salsa. |
