BEEF ENCHILADAS 
4 lbs. ground beef
1 med. onion (optional)
5 lbs. Velveeta cheese
2 pkgs. taco seasoning
1 pkg. enchilada seasoning
1 can Pet milk
1 pkg. (20 count) flour tortilla
1/2 qt. water

Brown meat, drain off excess fat. Add seasoning and 1/2 quart water. Let simmer; 20 minutes, add cheese, save about 1 1/2 pounds for top. After cheese has melted, (stirring occasionally), add Pet milk. Then in cake pan spray with Pam. Take flour tortillas, put 2 tablespoons (full) in center and roll. Put side by side on pan. After the pan is full, put sauce on top until 1/2 full. Top with cheese. Cover and bake at 300 degrees for 20 minutes.
