CRANBERRY ZUCCHINI BREAD 
3 1/4 c. flour (sifted)
1 1/2 c. sugar
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
1 c. shredded zucchini
1 c. cranberries
1 c. raisins
1/4 c. raw wheat germ
3/4 c. chopped nuts
3 eggs
1 c. oil

In a large bowl, stir together all ingredients except eggs and oil. In second bowl, beat eggs and oil. Pour over flour mixture and stir only until moistened. Divide batter evenly between two greased standard size loaf pans and bake at 350 degrees for about 1 hour or until done. Cool in pans for 10 minutes. Then remove from pans and cool thoroughly, with loaves right side up.
