6 DAY SWEET PICKLES | |
2 gallons cucumbers Make a brine of 2 cups salt to a gallon of water. Boil and pour over cucumbers boiling hot. Let stand one week. Drain and cut in chunks. For 3 mornings, pour over cucumbers a solution of 1 tablespoon powdered alum to a gallon of boiling water. Make fresh solution each morning. Heat: 6 c. vinegar 1/3 c. pickling spices 1 tbsp. celery seed Boil and pour over pickles. Drain off on fifth morning and add 2 cups sugar to the liquid. Heat to boiling point and pour back on pickles. Drain off sixth morning and add 1 cup sugar. Heat packed pickles in jars, pour over and seal hot. |
