CHINESE OMELETTES 
1/2 c. pork, beef or chicken
1/2 c. minced mushrooms
Soy sauce or tamari sauce
8 eggs
1/2 c. minced water chestnuts
4 tsp. sesame oil

Prepare meat and vegetables. beat 2 eggs for each omelette. In a wok or skillet, heat 1 teaspoon sesame oil. Add eggs. Sprinkle with 2 tablespoons meat, 2 tablespoons water chestnuts and 2 tablespoons mushrooms. Cook over low heat until set but moist on top. Sprinkle with soy sauce. Roll up.
