MARINATED MUSHROOM SALAD 
1 c. salad oil
1 lb. fresh mushrooms, cut
1/3 c. wine vinegar
1 tsp. sugar
1/2 medium cauliflower (in rosettes)
1/4 tsp. powdered mustard
1 c. celery, sliced
1 1/2 tsp. salt
1 green pepper, cut in strips
1/2 tsp. black pepper
2 tbsp. onion, grated

Combine oil, vinegar, sugar, pepper, salt, and mustard. Shake well. Add onion and reshake. Combine mushrooms, cauliflower, celery, and green pepper in large bowl. Pour liquid from jar over vegetables and mix well. Chill until serving time, tossing occasionally before serving. When ready to serve, toss marinated vegetables over freshly torn spinach or leaf lettuce. Serves 8 to 10.
