SPICY WALNUT LOAF CAKE 
1 c. seedless raisins
1 c. apple juice
2 c. all-purpose flour
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. ground nutmeg
1/2 tsp. ground allspice
1/2 c. shortening
1 c. packed brown sugar
1 egg
1/2 c. chopped walnuts

In saucepan, combine raisins and apple juice; bring to boil. Remove from heat; let stand 5 minutes. Drain, reserving liquid.

Combine flour, baking powder, cinnamon, soda, nutmeg, allspice, and 1/2 teaspoon salt.

In mixer bowl, beat shortening 30 seconds. Add brown sugar; beat well. Add egg; beat 1 minute more. Add dry ingredients and reserved liquid alternately, beating well after each addition.

Fold in raisins and walnuts. Turn into greased 9x5x3 inch loaf pan. Bake in 325 degree oven 1 hour or until done. Cool in pan 10 minutes; remove to wire rack; cool. Makes 1 loaf.
