CARROT CAKE LOAF 
3 c. flour, take 1 tbsp. out of ea. cup
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. sugar
4 eggs
1 c. vegetable oil
3 c. grated carrots
1 c. chopped nuts, walnuts or pecans

Combine all ingredients, except grated carrots and nuts, in a large bowl. Mix well with large spoon. Add carrots and nuts. Divide batter and place in two small loaf pans that have been greased and dusted with flour. Bake at 350 degrees for one hour.
