MEXICAN EGG DELIGHT | |
1 lb. Jack cheese, shredded 1 c. flour 1 c. milk 1 pt. cottage cheese, sm. curd 6 eggs, lightly beaten 1 c. melted butter Red or green salsa Combine in bowl and mix well cheese, milk, flour, cottage cheese, eggs and 1/2 butter. Spread remaining butter in a 12 x 7 inch pyrex pan. Pour mixture in pan and bake at 375 degrees for 40 minutes or until golden brown. Cut in 2 x 2 inch squares. Serves 12-15. Serve with salsa. This can be prepared the night before and refrigerate for best results. Do not substitute low fat cheese or butter. |
