EILEEN'S SHOE PEG CORN RELISH | |
2 cans white corn (solid pack) Del Monte 1 can Mexicorn (solid Pack) 1 can shoestring carrots, drain 1 med. green bell pepper, chopped 1 small, onion, chopped fine Combine the above in bowl. DRESSING: 3/4 c. vinegar 1/2 c. sugar 1/2 c. oil (salad or cooking oil) 1/2 tsp. salt Combine the above. Stir well and taste. Add more sugar or vinegar if needed. Pour over corn and stir well. Cover and marinate overnight in refrigerator. Keeps well for days. |
