BANANA WHEAT GERM MUFFINS 
1 1/2 c. flour
1 c. toasted wheat germ
1/2 c. brown sugar
1 tbsp. baking powder
1 tsp. salt
1 tsp. pumpkin pie spice or ground nutmeg
2 lg. eggs
1/2 c. milk
1/4 c. butter, melted
1 c. mashed ripe banana
1/2 c. chopped walnuts; optional
1/2 c. chocolate chips; optional

Heat oven to 425 degrees. Grease 12 muffin cups. In a large bowl, combine all dry ingredients and mix well. Beat eggs with milk, butter and bananas until smooth. Add to dry ingredients and blend until well moistened. Stir in nuts and chocolate chips. Spoon into muffin cups and bake until a rich brown, about 20 minutes. Serve warm.
