BANANA NUT CAKE WITH CREAM
CHEESE FROSTING
 
2 1/2 c. cake flour
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
2/3 c. butter
2/3 c. buttermilk
1 1/4 c. mashed bananas
3 eggs
2/3 c. chopped pecans

In a bowl combine flour, sugar, baking powder, soda, and salt. Blend in butter, 1/2 of the buttermilk and mashed bananas. Beat for 3 minutes, add eggs and remaining buttermilk. Beat for 3 minutes. Stir in pecans. Pour into greased and floured 9 x 3 inch pan and bake at 350 degrees for 45-50 minutes. Frost.

CREAM CHEESE FROSTING:

1/2 c. butter
1 sm. pkg. cream cheese
1 tsp. vanilla
1 lb. powdered sugar

Combine butter, cream cheese, and vanilla; beat until smooth. Gradually add the sugar, beating well. If mixture is too thick to spread, add a small amount of milk.
