14 KAROT CAKE WITH CREAM CHEESE
FROSTING
 
2 c. flour
2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 c. sugar
1 1/2 c. oil
4 eggs
2 c. grated carrots
1 sm. can crushed pineapple
1/2 c. chopped nuts

FROSTING:

1/4 c. butter
8 oz. cream cheese
1 lb. confectioners sugar
1 tsp. vanilla

Sift flour, baking powder, soda, and salt together into large bowl. Add cinnamon, sugar, oil, and eggs and well. Add grated carrots and pineapple. Turn into greased and floured cake pans. Bake at 350 degrees for 35-40 minutes. Cool in pans for a short while. I often use a tube pan and bake at 350 degrees for about 1 hour.

FROSTING: Soften butter and cream cheese; add vanilla and sugar. Beat well and spread on cake.
